Shape into ball, place into a bowl and cover with a cotton tea towel
Refrigerate 24-72 hours
Warm to room temp (30-60 min)
Preheat oven + Dutch oven to 450°F (30 min)
Score dough
Bake covered 24-30 minutes
Cool 1-2 hours before slicing
